Pork Tenderloin with Sun-Dried Tomatoes

Juicy pork rolls with aromatic tomato-herb filling is a recipe for delicious meat in an Italian style.

Ingredients

  • Fresh basil – 12 g
  • Garlic clove – 2 pieces
  • Olive oil – 1 tablespoon
  • Black pepper – a pinch
  • Pork tenderloin – 500 g
  • Salt – a pinch
  • Sun-dried tomatoes – 220 g

Preparation

Cut the pork tenderloin into 1.5-2-centimeter slices, gently flatten each one into a larger piece, and season with salt and pepper.

Cut the tomatoes into smaller pieces and slice the garlic. Place a piece of tomato, a few basil leaves, and a few slices of garlic on each slice of pork tenderloin. Gently roll up each stuffed slice of tenderloin and secure with a toothpick.

Heat the olive oil in a pan, sear the pork tenderloin rolls. Then transfer the meat to a baking sheet or ovenproof dish and place in an oven preheated to 200°C for approximately 15 minutes.
