Tortillas with pork tenderloin and avocado salad – a quick way to a delicious meal!
Ingredients
- Avocado, 1 pc
- Vegetable broth, 100 ml
- Honey, 1 tsp
- Ground coriander, 2 tsp
- Oil, 2 tbsp
- Olive oil, 2 tbsp
- Salt, 1 pinch
- Sour cream (18%), 80 g
- Fresh coriander, 45 g
- Lime, 1 pc
- Pork tenderloin, 400 g
- Garlic cloves, 2 pcs
- Red apple, 1 pc
- Tortillas, 4 pcs
Preparation
Step 1: Braise the Pork Tenderloin
Scald the lime, finely grate the zest, and squeeze the juice from half of the fruit. Peel and press the garlic through a press. Mix with lime zest and ground coriander. Rinse the pork tenderloin, pat dry, and clean. Lightly salt. Rub with the marinade and leave for about 30 minutes. Sear the pork tenderloin on both sides in hot oil for about 5 minutes. Add broth and simmer covered over low heat for about 20 minutes. Remove, let cool, and slice thinly.
Step 2: Prepare the Avocado Salad
Peel the apple, remove the core, and dice finely. Peel the avocado, separate the flesh from the pit, and also dice. Mix both ingredients with lime juice. Rinse the coriander, pat dry, and chop. Add to the salad and season with salt and honey.
Step 3: Roll the Tortillas
Briefly heat the tortillas in a dry pan until they become soft. Spread a little sour cream on them, spread the avocado salad and slices of pork tenderloin, and roll up. Cut diagonally in half and serve immediately.
