Scrambled eggs with mushrooms and onion

Scrambled eggs have a special place in Polish cuisine. They are prepared in many different ways. One of the tastiest recipes is with mushrooms and onion. It tastes delicious!

Ingredients:

  • 4 eggs
  • 1 cup sliced mushrooms
  • 1/2 cup chopped onion
  • 2 tablespoons butter or oil
  • Salt and pepper to taste
  • Optional: grated cheese, chopped fresh herbs (such as parsley or chives)

Method of making:

Melt the butter or oil in a frying pan over a medium heat.

Add the chopped onion to the pan and cook until soft and translucent, about 3-4 minutes.

Add the sliced mushrooms to the pan and cook until tender and golden brown, about 5-6 minutes.

While the mushrooms and onions are cooking, break the eggs into a bowl and whisk until well beaten. Season to taste with salt and pepper.

When the mushrooms and onions are cooked, pour the beaten eggs into the frying pan.

Leave the eggs to cook undisturbed for a minute or two, until the edges begin to set.

Using a spatula, gently move the eggs from the edges to the centre of the frying pan, allowing the uncooked eggs to flow to the edges.

Continue to cook and stir the eggs until they are cooked to your desired consistency. Take care not to overcook them; they should be moist and slightly runny.

When the eggs are cooked, remove the pan from the heat and transfer to a plate.

If you like, sprinkle grated cheese or chopped fresh herbs over the dish before serving.
