Ingredients:
- ½ cup butter
- 1 small onion, diced
- 1 (16 oz) package egg noodles
- 1 (16 ounce) carton of cottage cheese
- ½ cup sour cream
- ½ teaspoon sea salt
- ¼ teaspoon ground black pepper
Method of preparation:
Melt the butter in a saucepan over a medium heat.
Cook and stir the diced onion in the melted butter until soft, about 7 to 10 minutes.
Bring a large saucepan of lightly salted water to the boil.
Add the egg pasta and cook, stirring occasionally, until partially cooked, about 5 minutes.
Drain and return the pasta to the saucepan.
Pour the onion mixture over the pasta.
Stir in the cottage cheese, sour cream, sea salt and black pepper.
Cook over a medium heat, stirring occasionally, until the sauce is heated through and the pasta is tender but still firm to the bite, about 5 to 8 minutes.
