Pinsa – Lighter Cousin of Pizza

Pinsa is an alternative to classic pizza, with a history dating back to ancient Rome. The aromatic, crispy dough made from a mixture of various flours and baker’s yeast quickly gained popularity due to its digestibility and interesting flavor. How do you prepare authentic pinsa? Ingredients

Dough:

  • Italian type 00 flour – 500 g
  • Water – 400 ml
  • Olive oil – 10 ml
  • Salt – 12 g
  • Dried yeast – 4 g

Sauce:

  • Canned peeled tomatoes – 500 g
  • Extra virgin olive oil – 10 ml
  • Salt – 2 g

Toppings:

  • Arugula – 60 g
  • Cherry tomatoes – 80 g
  • Salt – 2 g
  • Black pepper – 1.5 g
  • Olive oil – 20 ml
  • Stracciatella cheese – 2 pieces

Preparation

Dough:

Step 1: Prepare the Base Sift the flour into a large bowl, then add the yeast and 320 ml of water. Mix well.

Step 2: Roll out the Dough Sprinkle a work surface with flour, then place the dough on it and start kneading. After a while, add olive oil and salt.

Step 3: Knead the Dough Knead the dough for about 5-6 minutes to incorporate the oil. Then add the remaining water and continue kneading for another 5-6 minutes. The dough should be slightly sticky but not runny.

Step 4: Let the Dough Rise Wrap the dough in plastic wrap and refrigerate for 48 hours (or preferably 72 hours).

Step 5: Shape the Pinsa Remove the dough from the refrigerator and divide it into two pieces. Shape each into an oval-shaped disk.

Sauce:

Step 1: Crush the Tomatoes Pass the tomatoes through a sieve into a large bowl set over a coarse strainer.

Step 2: Season the Sauce Add salt and olive oil to the tomatoes. Mix well.

Step 3: Spread the Sauce on the Dough Spread the sauce evenly over the dough, leaving no empty edges.

Toppings:

Step 1: Prepare the Ingredients Wash and dry the arugula. Wash the cherry tomatoes and cut them in half.

Step 2: Bake the Pinsa Place the sauced pinsa in the oven and bake for 10 minutes. Repeat the same process with the second portion of dough.

Step 3: Add Fresh Ingredients Top the baked, aromatic pinsa with arugula, then spread stracciatella cheese over it. Finally, add a few chopped cherry tomatoes, season with salt and pepper, drizzle with olive oil, and it’s ready!
