Peach and Nut Cake

Fluffy, fragrant, yogurt-based dough with sweet fruits. A tasty dessert that every sweet tooth will love.

Ingredients

  • Eggs – 3 pieces
  • Canned Peaches – 860 g
  • Sugar – 190 g
  • Brown Sugar – 30 g
  • Greek Yogurt – 350 g
  • Baking Powder – 1 teaspoon
  • Baking Soda – 1 teaspoon
  • Butter – 200 g
  • All-Purpose Flour – 370 g
  • Mixed Nuts – 100 g
  • Milk – 30 ml
  • Vanilla Sugar – 1 packet
  • Salt – a pinch

Preparation

Drain the peaches on a sieve and cut them into larger cubes. Sift the flour through a sieve and add baking powder, baking soda, salt, and vanilla sugar. Mix and set aside. Beat the butter with granulated sugar using a mixer for about 3 minutes. Then reduce the mixer speed and add the eggs one by one, half of the amount of flour mixed with baking powder, baking soda, salt, and vanilla sugar. Then add half of the yogurt. Mix. Add the remaining amount of flour and yogurt, and milk. Mix. Spread half of the prepared batter on a baking sheet lined with parchment paper, sprinkle with half of the peaches, then cover with the remaining batter.

Sprinkle the cake with the remaining peaches, nuts (previously chopped into small pieces), and brown sugar. Bake in an oven preheated to 180°C for about 60 minutes. Let the baked cake cool before serving.
