Healthy Coconut Oatmeal


This recipe combines the heartiness of oats with the sweetness of maple syrup and dried fruit, and the crunch of coconut and walnuts. It’s a nutritious and delicious way to fuel your day.


  • 3 ½ cups plain or vanilla soymilk
  • ¼ teaspoon salt
  • 2 cups rolled oats
  • ¼ cup pure maple syrup
  • ⅓ cup raisins
  • ⅓ cup dried cranberries
  • ⅓ cup sweetened desiccated coconut
  • ⅓ cup chopped walnuts
  • 1 (8 oz) container plain yoghurt (optional)
  • 3 tablespoons honey (optional)

Method of preparation:

In a large saucepan, bring the soymilk and salt to a boil. Stir in the oats and reduce the heat to a simmer. Cook for 10 minutes, stirring occasionally.

Stir in the maple syrup, raisins and dried cranberries. Continue to cook for a further 5 minutes or until the oats have the desired consistency.

Remove the pan from the heat and stir in the desiccated coconut and chopped walnuts.

Divide the oats into bowls. If you like, top each serving with a dollop of yoghurt and a drizzle of honey.
