Let’s whip up a batch of Mini Mexican Quiches, a delicious bite-sized treat that packs a punch of flavour. These quiches are a fiesta of textures and flavours with creamy cheese, spicy chorizo and a medley of spices.
Ingredients:
- ¼ cup cream cheese
- ¼ cup butter
- ⅔ cup all purpose flour
- 3 eggs
- ½ cup milk
- 1 cup grated Monterey Jack cheese
- ½ cup ground chorizo, browned
- 1 (4 ounce) can diced green chiles
- ½ cup diced red onion
- 2 tablespoons chopped fresh coriander
- ½ teaspoon garlic powder
- ½ teaspoon chilli powder
- ½ teaspoon ground black pepper
- ¼ tsp ground cumin
- ¼ tsp cayenne pepper
- ¼ teaspoon salt
Method of preparation:
In a bowl, work the cream cheese, butter and flour into a dough. Press the mixture into the base and up the sides of a mini muffin tin.
In a separate bowl, whisk together the eggs and milk. Stir in the Monterey Jack cheese, browned chorizo, green chillies, red onion, coriander and all the spices.
Spoon the mixture into the muffin tray.
Bake at 375°F (190°C) for about 20 minutes or until the quiches are set and golden.
Serve: Allow the quiches to cool for a few minutes, then remove from the tin and serve.
