  • double crust pie dough for a 9″ pie
  • 4 cups mango, peeled and sliced
  • ½ cup white sugar
  • 3 tablespoons cornstarch
  • 2 teaspoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter, cut into small pieces

Method of preparation:

In a large bowl, combine the mango slices, sugar, cornstarch, lemon juice and cinnamon. Stir until the mango slices are well coated.

Preheat the oven to 190°C (375°F).

Roll out half of the pastry and line a 9-inch pie plate. Spoon the mango filling into the pastry base and sprinkle with the butter. Roll out the remaining pastry to cover the filling. Crimp the edges to seal and cut slits in the top crust to allow steam to escape.

Bake in the preheated oven for about 45 minutes, or until the crust is golden and the filling is bubbling.

Cool and serve: Allow to cool on a wire rack before serving to allow the filling to set.
