The blend of spices, ground beef and cheese creates a taste sensation that’s both familiar and new. It’s the perfect way to enjoy the flavours of Mexico in a fun, easy-to-eat format. This recipe is just a starting point. Feel free to add your favourite toppings such as olives, guacamole or even some lettuce and sour cream on top after baking for a personal touch.
Ingredients:
- ½ pound ground beef
- 1 medium onion, diced
- 1 clove of garlic, minced
- 1 tablespoon chilli powder
- 1 teaspoon ground cumin
- ½ teaspoon paprika powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 (16oz) tin of refried beans
- 4 (10-inch) flour tortillas
- ½ cup salsa
- 1 cup grated cheddar cheese
- 1 cup grated Monterey Jack cheese
- 2 spring onions, chopped
- 2 tomatoes, diced
- ¼ cup jalapeño peppers, thinly sliced
- ¼ cup sour cream (optional)
Method of preparation:
Preheat the oven to 350°F (175°C).
In a skillet over medium heat, cook the ground beef, onion and garlic until the beef is browned and the onion is tender. Pour off any excess fat.
Stir in the chilli powder, cumin, paprika, salt and black pepper. Cook for another minute or so until fragrant.
Place two flour tortillas on a baking tray. Spread half of the refried beans on each tortilla, leaving a small rim around the edges.
Spread the beef mixture evenly over the beans.
Place the remaining two tortillas on top of the beef.
Top with salsa and cheese: Spread the salsa over the top tortillas and sprinkle both the cheddar and Monterey Jack cheeses evenly over the salsa.
Place in the oven and bake for about 10 minutes or until the cheese is melted and bubbly.
Remove from the oven and top with the spring onions, diced tomatoes and jalapeño slices.
Slice and serve with a dollop of sour cream on each slice if desired.
