Mac & Cheese

A popular American recipe for pasta baked with cheese sauce.

Ingredients:

  • 250 g spiral pasta
  • 7 cm piece of baguette (50 g), e.g., sourdough
  • 2 tablespoons butter
  • 1 clove garlic
  • 1 teaspoon mustard
  • 2 tablespoons all-purpose flour
  • 0.6 liters milk
  • 200 g grated cheddar cheese
  • 40 g grated parmesan cheese
  • 1 tablespoon chopped parsley

Preparation:

Preheat the oven to 200°C (390°F).

Cut the baguette into small cubes and mix with 0.5 tablespoon of softened or melted butter, season with salt and pepper. Spread on a baking sheet lined with parchment paper and bake for 5 minutes. Remove from the oven and set aside. Keep the oven on.

Boil water in a large pot and salt it. Add the pasta and cook 2 minutes less than the time indicated on the package. Drain and return to the pot.

To make the sauce: in a pot, melt the remaining 1.5 tablespoons of butter, add the minced garlic and mustard. Stir in the flour and mix with a whisk. Gradually pour in the milk while continuously whisking until a smooth sauce forms. Bring to a boil, then remove from heat and add the grated cheddar cheese. Stir until melted.

Add the pasta and mix with the sauce. Transfer to a baking dish. Sprinkle with the baguette croutons and then scatter the grated parmesan on top.

Bake uncovered in the oven for 15 minutes. Remove and sprinkle with chopped parsley.
