Ingredients:
- 5 ripe bananas
- 1 lemon
- 1 tablespoon dried basil (or 3 tablespoons fresh basil)
Method of preparation:
Peel and slice the bananas into coins. Place the banana slices in a freezer bag and freeze until firm, at least 2 hours or overnight.
Once the bananas are frozen, zest and juice the lemon.
Place the frozen banana slices, lemon zest and juice in a food processor or high-powered blender.
Add the dried basil (or fresh if using).
Blend until smooth and creamy. You may need to stop and scrape down the sides a few times.
Serve immediately for a soft-serve texture or transfer to a container and freeze for another 1-2 hours for a firmer consistency.
Before serving, allow the ice cream to sit at room temperature for a few minutes to soften slightly.
