Kulfi - Indian Ice Cream

Indian ice cream like no other. Well, unless you go to India. Anyway, it will be much easier to prepare it in your own kitchen.


  • Milk powder – 3 cups
  • Pistachios – 1/3 cup
  • Heavy cream (30%) – 400 ml
  • Milk – 1-2 cups
  • Saffron Threads – 1/2 teaspoon
  • Ground Cardamom – 1/2 teaspoon
  • Powdered sugar – 1/4 cup


  1. In a saucepan, combine the milk powder and heavy cream. While stirring continuously, pour in the milk. The mixture should have a slightly looser consistency than cream (the absorption of milk powder varies, but from experience, I know it absorbs differently), season with saffron, cardamom, and powdered sugar. Cook the mixture over very low heat until it slightly thickens. Remove from heat and add the pistachios.
  2. Pour the cooled mixture into an ice cream maker and churn until it noticeably freezes. Before serving, sprinkle with chopped pistachios.
