Honey Pancakes with Fruit

A good start to a new day tastes like honey pancakes made with rice flour and topped with your favorite fruits. Make sure to greet them with a hearty “good morning”!

Ingredients

Pancakes:

  • Sugar – 1 tablespoon
  • Cinnamon – 0.5 teaspoon
  • Eggs – 2 pieces
  • Plain yogurt – 400 ml
  • Rice flour – 400 g
  • Coconut oil – 2 tablespoons
  • Baking soda – 1 teaspoon
  • Salt – 1 pinch

Additional:

  • Honey – 2 tablespoons
  • Raspberries – 70 g

Preparation

Step 1: Beat the Egg Whites Whisk the egg whites until stiff peaks form. Then combine them with sugar, salt, egg yolks, a tablespoon of melted coconut oil, and yogurt.

Step 2: Mix the Batter Combine the flour with baking soda and add to the other ingredients. Mix gently until a smooth batter forms.

Step 3: Cook the Pancakes Melt the remaining coconut oil in a pan, wait until it heats up, and fry the pancakes on both sides over low heat until golden brown.

Step 4: Serve the Pancakes Transfer the pancakes to a plate and drizzle them with honey. Garnish with your favorite fruits. If they are large, cut them into pieces.
