Our Healthy Broccoli Soup is a verdant treasure, brimming with the goodness of garden-fresh broccoli, the warmth of home-cooked leeks and garlic, and the heartiness of rich vegetable broth. Whether you’re looking for comfort on a chilly evening or a refreshing touch to your meal, this soup is a delightful embrace of wholesome flavours.
Ingredients:
- 1 head of broccoli, cut into florets
- 2 tablespoons unsalted butter
- 1 cup leek, chopped
- 4 cloves of garlic, chopped
- 4 cups vegetable stock
- 1 teaspoon fine sea salt, more to taste
- 1/2 teaspoon black pepper, more to taste
- 1 pinch red pepper flakes
- 1/2 cup cheddar cheese, grated (optional)
Method of preparation:
Wash and chop the broccoli florets.
Clean and chop the leek.
Chop the garlic cloves.
Melt the butter in a large saucepan over a medium heat.
Add the chopped leeks and minced garlic. Cook until the leeks are soft and translucent, about 3-5 minutes.
Add the broccoli florets to the pot and stir to combine with the leeks and garlic.
Pour in the vegetable stock and bring to the boil.
Once boiling, reduce the heat to a simmer and cook until the broccoli is tender, about 10-15 minutes.
Add the fine sea salt, black pepper and red pepper flakes.
Taste and season to taste.
Use an immersion blender to purée the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender and blend until smooth.
If using cheese, return the blended soup to the pan and stir in the grated cheddar until melted and well combined.
