Ingredients – mustard butter
- Lemon – 0.5 piece
- Butter – 100 g
- Honey – 0.5 teaspoon
- French mustard – 4 tablespoons
- Fresh rosemary – 16 g
Ingredients – sea bass
- Sea bass – 2 pieces
- Olive oil – 1 tablespoon
Ingredients – pesto
- Garlic clove – 1 piece
- Parsley – 5 g
- Olive oil – 60 ml
- Pistachios – 3 tablespoons
- Grana Padano cheese – 60 g
- Fresh basil – 5 g
Ingredients – grilled potatoes
- Olive oil – 1 tablespoon
- Potatoes – 500 g
Preparation
Take the butter out of the fridge and let it soften at room temperature. Mix the butter with mustard, honey, chopped rosemary, and grated lemon zest. Set aside.
Clean and scale the sea bass. Rinse thoroughly and pat dry with paper towels. Gently score the skin and flesh, then marinate in olive oil. Grill, brushing with mustard butter from time to time, until the skin is lightly charred on each side.
Grate the cheese. Blend all pesto ingredients until smooth. Steam the potatoes until tender, then slice them into thick slices or halves if they are small. Marinate in olive oil and grill until golden brown. Before serving, mix with pesto. Serve the grilled sea bass with pesto potatoes.
