Wonderful pouches filled with juicy apples and crispy crumble. An ideal dessert for a summer afternoon.
Ingredients
For Serving:
- Powdered sugar, 10 g
- Fresh mint leaves, 2 g
- Plant-based yogurt, 4 tablespoons
For Baked Apples:
- Demerara sugar, 75 g
- Cinnamon, 2 teaspoons
- Oats, 55 g
- Baking powder, 0.5 teaspoons
- Coconut oil, 110 g
- Wheat flour, 85 g
- Red apple, 4 pieces
Preparation:
Step 1: Hollow out the Apples Cut the apples in half and hollow out the core using a spoon. Place each apple half on a piece of aluminum foil. The foil sheet should be wide enough to wrap the apples completely.
Step 2: Season the Apples Combine cinnamon in a bowl with 3 tablespoons of demerara sugar. Mix well and sprinkle evenly over the apple flesh.
Step 3: Prepare the Vegan Crumble In another bowl, thoroughly mix coconut oil, the remaining demerara sugar, flour, oats, and baking powder. Fill the seed cavities generously with the vegan crumble.
Step 4: Grill or Bake the Apples Wrap the apples with the crumble in aluminum foil and place them on the grill rack of a preheated grill or on a baking sheet. Grill for about 20 minutes or bake for about 20 minutes in an oven preheated to 180°C.
Step 5: Serve the Apples Carefully open the hot apple pouches and transfer them to plates. Dust with powdered sugar sifted through a sieve. Serve with a portion of plant-based yogurt. Garnish with fresh mint leaves.
