Healthy homemade granola

Start your day with this recipe. This granola is not only delicious, but also packed with nutrients from oats, seeds and prunes. The addition of tahini gives it a unique flavour profile, while the orange zest and juice add a refreshing tang.

Ingredients:

  • 290g tin of pitted prunes in natural juice, drained
  • 1 orange, zested and juiced
  • 2 tablespoons tahini
  • 350g oats
  • 25g flaked almonds
  • 25g sunflower seeds
  • 25g pumpkin seeds
  • 2 x 400g cups of fortified soya or plain organic yoghurt

Method of preparation:

Preheat the oven to 180°C (160°C fan) mark 4.

In a blender, blend the prunes, orange zest, orange juice and tahini until smooth.

In a large bowl, mix together the oats, flaked almonds, sunflower seeds and pumpkin seeds.

Pour the prune mixture over the oat mixture and stir until well coated.

Spread the mixture evenly on a baking tray and bake for 15-20 minutes or until golden brown, stirring occasionally to ensure even baking.

Allow the muesli to cool completely. It will get crispier as it cools.

Serve with fortified soy or plain organic yoghurt.
