A quick and easy-to-make dinner dish – goulash with chorizo and chickpeas in tortilla!
Ingredients
- Spring onions, 2 pcs.
- Sugar, a pinch
- Black pepper, a pinch
- Red tomatoes, 2 pcs.
- Olive oil, 1 tbsp
- Parsley, 2 tbsp
- Salt, a pinch
- Red wine, 200 ml
- Canned chickpeas, 70 g
- Canned diced tomatoes, 150 g
- Chorizo sausage, 200 g
- Garlic cloves, 2 pcs.
- Tortillas, 4 pcs.
- Manchego cheese, sliced, 50 g
Preparation
Step 1: Slice the Sausage
Slice the chorizo sausage into 0.5 cm thick slices.
Chorizo is sautéed until golden brown in a pan, then add the chopped spring onions and garlic, gently sauté until softened. Pour in the dry red wine and cook until the wine evaporates to 1/3 of its volume. Add the diced tomatoes. Season with salt, pepper, and sugar. Cook until thickened. Finally, add the chickpeas and chopped parsley.
Step 2: Combine the Tomatoes with Garlic, Spring Onions, and Grated Cheese
Dice the tomatoes, add chopped garlic, the second spring onion with its green part, and grated Manchego cheese. Season with olive oil.
Step 3: Arrange the Goulash on the Pre-baked Tortilla
Arrange the thick goulash on pre-baked tortillas in a dry pan. Serve with tomato salsa.
