Goddess Bowls

Perfect for a hearty lunch, this recipe features tender roasted asparagus and seasoned chicken breasts, all served over a bed of nutritious brown rice. The bowl is beautifully finished with creamy slices of avocado and juicy cherry tomatoes.

Ingredients:

For the asparagus and chicken:

  • 1/2lb asparagus, ends trimmed
  • 2 tablespoons extra virgin olive oil, divided
  • Kosher salt
  • Freshly ground black pepper
  • 1 lb. boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 teaspoon dried oregano

For the dressing:

  • 1 cup mayonnaise
  • 1 cup Greek yoghurt
  • 1 1/2 cups chopped basil leaves
  • 1/2 cup chopped parsley
  • 1/4 cup chopped chives (plus extra for garnishing)
  • 1/4 cup lemon juice
  • 2 cloves of garlic, coarsely chopped

For the bowls:

  • 4 cups cooked brown rice
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved

Method of cooking:

Preheat the oven to 200°C (400°F).

On a baking sheet, toss the asparagus with 1 tablespoon of olive oil and season with kosher salt and freshly ground black pepper. Arrange in a single layer.

In a small bowl, combine garlic powder, dried oregano, 1 teaspoon salt and 1/2 teaspoon black pepper. Rub the chicken breasts with the remaining 1 tbsp olive oil and coat evenly with the seasoning mixture.

Place the chicken breasts on the same baking tray as the asparagus or on a separate tray, depending on size.

Roast the chicken and asparagus for 20-25 minutes, or until the chicken is cooked through (165°F internal temperature) and the asparagus is tender. Allow the chicken to rest for 5 minutes before slicing.

In a food processor or blender, combine the mayonnaise, Greek yoghurt, chopped basil leaves, chopped parsley, chopped chives, lemon juice and coarsely chopped garlic.

Blend until smooth and creamy. Taste and season to taste. Set aside.

Divide the cooked brown rice evenly between the 4 bowls.

Top each bowl with sliced avocado, halved cherry tomatoes, roasted asparagus and sliced chicken breast.

Drizzle generously with the prepared dressing.

Garnish with additional chopped chives if desired.
