Garlic Roasted Brussels Sprouts

Ingredients:

  • 1lb Brussels sprouts
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/8 tsp black pepper
  • 3 large cloves of garlic, minced

Method of preparation:

Preheat the oven to 400 degrees F (200 degrees C).

Prepare the Brussels sprouts: Trim the ends of the Brussels sprouts and remove any yellow leaves. Cut each sprout in half lengthways.

Season: In a large bowl, toss the Brussels sprouts with the olive oil, salt, black pepper and minced garlic until well coated.

Set aside to roast: Arrange the Brussels sprouts in a single layer on a baking sheet lined with greaseproof paper.

Roast: Place in the oven and roast for 20-30 minutes, or until tender and the edges are crisp and browned. Stir halfway through to ensure even cooking.

Serve: Transfer the roasted Brussels sprouts to a serving dish and enjoy!
