French Breakfast Muffins

As the name suggests, these muffins are perfect for breakfast. They’re easy to grab on the go and can be a great way to start the day. These muffins are perfect for sharing with family or friends. Whether you’re hosting a brunch or just want to surprise your loved ones with a homemade treat, these muffins are sure to impress.

Ingredients:

  • 1/3 cup butter (melted)
  • 1/2 cup sugar
  • 1 egg (best at room temperature)
  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup milk
  • For the topping
  • 1/2 cup sugar
  • 1/2 cup butter (melted)
  • 1 teaspoon cinnamon

Method of preparation:

Preheat the oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.

In a medium mixing bowl, combine flour, 1/2 cup sugar, baking powder, nutmeg and salt.

Make a well in the centre of the mixture. Whisk together the egg, milk and 1/3 cup melted butter.

Add the egg mixture to the flour mixture and stir until just moistened (the batter may be lumpy).

Spoon the mixture into the prepared muffin cups.

Bake in a preheated oven for 20-25 minutes.

While the muffins are baking, mix together 1/2 cup sugar, 1/2 cup melted butter and cinnamon.

Immediately after baking, dip the tops of the muffins into the melted butter and then into the cinnamon-sugar mixture.

Serve the muffins warm.
