Taste the essence of the sea with Parchment Baked Salmon. This heart-healthy recipe wraps succulent salmon in a basil-infused embrace and gently cooks it to perfection. The aromatic herbs and zesty lemon slices add a burst of flavour while keeping the fish moist and tender.

Ingredients:

  • 1 (8oz) salmon fillet
  • Salt and black pepper to taste
  • ¼ cup chopped basil leaves
  • Olive oil cooking spray
  • 1 lemon, thinly sliced

Method of preparation:

Preheat the oven to 400 degrees F (200 degrees C).

Place the salmon fillet, skin side down, in the centre of a large sheet of parchment paper; season with salt and black pepper.

Using a sharp knife, make two 3cm slits in the fillet.

Stuff the chopped basil leaves into the slits.

Spray the fillet with cooking spray and place the lemon slices on top.

Fold the edges of the parchment paper over the fillet several times to create an airtight package.

Place the sealed package on a baking tray.

Bake in the pre-heated oven on the lowest rack until the salmon flakes easily and the meat is pink and opaque with a slightly darker pink colour inside, about 25 minutes.

An instant-read thermometer inserted into the thickest part of the fillet should register a minimum of 145 degrees F (65 degrees C).
