Feta & Clementine Lunch Bowl

This recipe is quick and easy to prepare. It’s perfect for those busy days when you don’t have much time to cook. Last but not least, the Feta & Clementine Lunch Bowl is delicious! The combination of flavours from the feta, clementines and mint is refreshing and satisfying.


  • 1 red onion, halved and thinly sliced
  • 1 lemon, zest and juice
  • 2 clementines, 1 zested and the flesh cut into slices
  • 2 cloves of garlic, chopped
  • 400g tin of green lentils, drained
  • 1 tablespoon balsamic vinegar
  • 1 ½ tbsp rapeseed oil
  • 1 red pepper, quartered and sliced
  • 60g feta, crumbled
  • small handful of mint, chopped
  • 4 walnut halves, chopped

Method of preparation:

In a large bowl, combine the red onion, lemon juice, clementine zest and garlic. Leave to stand for 10 minutes to allow the flavours to meld.

Add the drained lentils, balsamic vinegar and rapeseed oil to the bowl. Toss to combine well.

Add the sliced red pepper, sliced clementine, crumbled feta, chopped mint and chopped walnuts to the bowl. Toss again to combine.

Finally, sprinkle the lemon zest over the salad for an extra burst of flavour.

Serve immediately or chill for later. This salad is a great lunch option and easy to pack for on the go.
