Extra Large Pizza

Ideal crust, delicate mozzarella, golden gouda cheese, fresh zucchini, fragrant basil… That’s how a pizza should be!

Ingredients

For the Dough:

  • Fresh basil – 5 g
  • Sugar – a pinch
  • Zucchini – 5 pieces
  • Black olives – 30 g
  • Fresh yeast – 30 g
  • Wheat flour – 350 g
  • Mozzarella cheese – 1 piece
  • Olive oil – 6 tablespoons
  • Ground hot paprika – a pinch
  • Black pepper – a pinch
  • Red tomato – 1 piece
  • Salami sausage – 50 g
  • Gouda cheese – 100 g
  • Salt – a pinch
  • Water – 190 ml

Preparation

Dough

  • Gently heat 190 ml of water. In a clean bowl, crumble the fresh yeast. Pour warm water over the yeast (water should not be too hot, otherwise the yeast will scorch). Mix well with a fork.
  • In a mixer, sift the wheat flour. Add a pinch of salt and 2 tablespoons of olive oil. Start mixing, gradually adding the dissolved yeast in water. Knead the dough for about 3-4 minutes until it reaches a uniform consistency.
  • Shape the dough into a ball, place it in a dry bowl, cover with a clean cloth, and set it aside in a warm place for about 45 minutes to 1 hour – until it rises.

Sauce

  • Trim the ends of the zucchini. Cut each zucchini into thick slices. Put them in a blender and blend until smooth. Heat 2 tablespoons of olive oil in a pan, add the blended zucchini, season with a pinch of salt, pepper, and sugar. Stir, making sure it doesn’t burn.
  • Sauté the zucchini for 3-4 minutes uncovered. Stir until the zucchini juice evaporates.

Assembling

  • When the dough has risen, transfer it to a floured surface. Roll out the dough using a floured rolling pin. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  • Grate the gouda cheese, slice the tomato, cut the olives into slices, tear the mozzarella into smaller pieces.
  • Spread the zucchini puree evenly over the dough and arrange the ingredients: some grated gouda cheese, tomato slices, olives sliced into rings, torn mozzarella pieces, salami, and the remaining gouda cheese.
  • Sprinkle with a pinch of hot paprika and a few basil leaves. Season with pepper and salt. Bake the pizza in an oven preheated to 210°C (top-bottom heat) for about 30-40 minutes (checking every 15 minutes).
