Ingredients:
- 3lb boneless beef sirloin roast
- Salt (to taste)
- Black pepper (to taste)
- 2 tablespoons extra virgin olive oil
- 1 tablespoon Italian herb seasoning
- 2 teaspoons garlic powder
Method of preparation:
One hour before baking, remove the defrosted beef from the fridge and allow to come to room temperature.
Preheat the oven to 425 degrees F (220 degrees C).
Season the roast: Rub the roast with olive oil, then season with salt, black pepper, Italian herbs and garlic powder.
Place the seasoned roast in a roasting pan and roast for 20 minutes at 425 degrees F (220 degrees C).
Reduce the temperature: After 20 minutes, reduce oven temperature to 325 degrees F (165 degrees C) and continue roasting.
Use an instant-read meat thermometer inserted into the center of the roast to check for doneness: 125 degrees for rare, 145 for medium, or 160 for well-done1. Remove the roast from the oven when it is 5 degrees under the desired temperature.
Allow the roast to rest for 5-10 minutes before carving.
