Crispy Potatoes in Spicy Sauce

Delicious and crispy potatoes coated in a sticky, spicy Asian-style sauce. It’s hard to imagine a better snack!

Ingredients

For the Baked Potatoes:

  • Potatoes – 4 pcs
  • Rapeseed oil – 1 liter

First Layer of Spices:

  • Potato starch – 2 tablespoons
  • Wheat flour – 2 tablespoons
  • Sriracha sauce – 1 tablespoon
  • Salt – 0.5 teaspoon
  • Granulated garlic – 1 teaspoon

Second Layer of Spices:

  • Potato starch – 2 tablespoons
  • Wheat flour – 2 tablespoons
  • Water – 3 tablespoons
  • Black pepper – 0.25 teaspoon

Spicy Sauce:

  • Rapeseed oil – 2 tablespoons
  • Garlic cloves – 2 pcs
  • Chili flakes – 0.5 teaspoon
  • Sweet chili sauce – 100 ml
  • White sesame seeds – 2 tablespoons
  • Lemongrass – 0.5 teaspoon
  • Green onions – 1 bunch

Preparation

Step 1: Prepare the Potatoes

Peel the potatoes and cut them into sticks, like fries. Rinse the potatoes under running water to remove excess starch, then dry thoroughly with paper towels.

Step 2: Prepare the First Layer of Spices

In a bowl, mix all the ingredients for the first layer of spices. Coat the potato sticks thoroughly in the paste.

Step 3: Fry the Potatoes First Time

Heat 1 liter of rapeseed oil in a deep pot. Fry the seasoned fries until they are half-cooked. Transfer the semi-cooked potatoes to a bowl lined with paper towels to remove excess oil.

Step 4: Prepare the Second Layer of Spices

Mix the ingredients to create a batter that is not too thick.

Step 5: Fry the Potatoes Second Time

Coat the semi-cooked fries in the batter and fry again in hot oil until they are golden brown. Transfer the fully cooked potatoes to a bowl lined with paper towels to remove excess oil.

Step 6: Prepare the Sauce

Press the garlic through a garlic press and finely chop the green onions. Heat a wok or large pan. Add the oil to the wok, then add the garlic and chili flakes and fry for about 30 seconds, making sure the garlic does not burn. Add the sweet chili sauce, white sesame seeds, and lemongrass. Cook until the sauce thickens. Add the fried potatoes and green onions to the thickened sauce. Mix everything thoroughly and serve.
