Creamy Onion Soup with Croutons

Creamy onion soup is a dish that is associated with French cuisine. In France, however, onion cream soup is served in a different form than presented in this recipe and is not always blended to a smooth consistency. Ingredients

  • White onion, 3 large pieces
  • Carrot, 1 piece
  • Processed cheese, 5 dag
  • Vegetable broth, 4 cups
  • Potatoes, 2 pieces
  • Bread, 2 slices
  • Fine-grain iodized sea salt, to taste
  • Ground black pepper, to taste
  • Ground hot paprika, to taste
  • Butter, about 1 tablespoon

Preparation

Bouillon:

  1. Bring the broth to a boil. Peel the potatoes and carrot. Dice the potatoes into small cubes, and grate the carrot using a coarse grater. Add them to the broth. Cook until soft.

Soup: 2. Peel and finely dice the onions. Heat butter (about 1 tablespoon) in a pan, add the onions, and sauté, stirring frequently. The onions should become translucent but not browned. Add the onions to the broth and cook for about 5 minutes.

  1. Remove the soup from the heat, let it cool slightly, and add the processed cheese, cut into pieces (it can be flavored, e.g., herbal or with ham).
  2. Blend everything into a smooth cream and season to taste with salt and pepper.

Croutons: 5. Cut the bread into cubes. Heat a tablespoon of butter in a pan, add the bread, and fry until golden brown. Add more butter if necessary – the bread should be crispy but not burnt. Sprinkle with salt, pepper, and ground hot paprika.

  1. Pour portions of soup into bowls and sprinkle with croutons.
