Coconut-Lime Jelly with Lychees

This original dessert will surprise fans of traditional jellies with its unique flavor and addition of coconut milk.


  • Sugar – 250 g
  • Water – 750 ml
  • Gelatin – 3 tablespoons
  • Lime – 3 pieces
  • Coconut milk – 500 ml
  • Lychees – 400 g


Soak the gelatin in a few tablespoons of cold water.

Mix 700 ml of water and sugar together in a saucepan. Add the zest of 3 limes and 4 tablespoons of lime juice. Bring the mixture to a boil, stirring constantly. Once the mixture starts boiling, remove the saucepan from the heat, add 2/3 of the soaked gelatin, and stir until the gelatin dissolves. Finally, add the coconut milk and mix everything thoroughly until the ingredients are combined. Fill dessert cups with the prepared jelly and refrigerate until completely set.

Separate the syrup from the lychees. To the syrup, add 50 ml of lime juice and 50 ml of water, then bring it to a boil. Once the syrup starts boiling, remove it from the heat, add the remaining gelatin, and stir until dissolved. Allow the syrup to cool. Once it starts to thicken, pour it over the coconut jelly and arrange a few lychees on top. Return it to the refrigerator until the lime jelly sets as well.

Serving Serve decorated with a sprinkle of grated lime zest.
