Clafoutis is a type of baked pancake with plenty of fruit, a delicious dessert for any occasion inspired by French cuisine.
Ingredients:
- 500 g mixed berries: strawberries, raspberries, and blueberries
- 3 eggs + 2 egg yolks (room temperature)
- 90 g sugar
- 120 g all-purpose flour
- Pinch of salt
- 70 g melted butter (cooled)
- 300 ml lukewarm milk
- 1 teaspoon vanilla extract
- Powdered sugar
- Optional: vanilla ice cream for serving
Instructions:
- Preheat the oven to 175°C (350°F). Prepare an ovenproof dish with a diameter of about 23 cm (9 inches) or a rectangular dish measuring 20 x 30 cm (8 x 12 inches). Grease it with butter and dust with flour.
- Rinse and dry the strawberries and blueberries. Cut the strawberries in half if they are large. Mix all the berries together: strawberries, blueberries, and raspberries.
- In a mixing bowl, beat the eggs and egg yolks with sugar until light and fluffy. Add the flour and salt, and mix until combined.
- Add the melted (and cooled) butter and mix vigorously. Gradually add the lukewarm milk, mixing continuously. Finally, add the vanilla extract.
- Pour the batter into the prepared dish and spread the mixed berries evenly on top.
- Bake for about 40-45 minutes until the clafoutis is set and golden brown. If it browns too quickly towards the end, you can reduce the oven temperature to 170°C (340°F).
- Sprinkle with powdered sugar and serve warm, optionally with vanilla ice cream.
