Clafoutis

Clafoutis is a type of baked pancake with plenty of fruit, a delicious dessert for any occasion inspired by French cuisine.

Ingredients:

  • 500 g mixed berries: strawberries, raspberries, and blueberries
  • 3 eggs + 2 egg yolks (room temperature)
  • 90 g sugar
  • 120 g all-purpose flour
  • Pinch of salt
  • 70 g melted butter (cooled)
  • 300 ml lukewarm milk
  • 1 teaspoon vanilla extract
  • Powdered sugar
  • Optional: vanilla ice cream for serving

Instructions:

  1. Preheat the oven to 175°C (350°F). Prepare an ovenproof dish with a diameter of about 23 cm (9 inches) or a rectangular dish measuring 20 x 30 cm (8 x 12 inches). Grease it with butter and dust with flour.
  2. Rinse and dry the strawberries and blueberries. Cut the strawberries in half if they are large. Mix all the berries together: strawberries, blueberries, and raspberries.
  3. In a mixing bowl, beat the eggs and egg yolks with sugar until light and fluffy. Add the flour and salt, and mix until combined.
  4. Add the melted (and cooled) butter and mix vigorously. Gradually add the lukewarm milk, mixing continuously. Finally, add the vanilla extract.
  5. Pour the batter into the prepared dish and spread the mixed berries evenly on top.
  6. Bake for about 40-45 minutes until the clafoutis is set and golden brown. If it browns too quickly towards the end, you can reduce the oven temperature to 170°C (340°F).
  7. Sprinkle with powdered sugar and serve warm, optionally with vanilla ice cream.
