There’s always a good day to make pancakes, especially when you have a recipe for a delicious plum sauce.
Ingredients
Pancakes:
- Sugar – 2 tbsp
- Cinnamon – 1 tsp
- Egg – 1 pc.
- Butter – 2 tbsp
- Milk – 300 ml
- Salt – 0.5 tsp
- All-purpose flour – 120 g
Plum Sauce:
- Sugar – 5 tbsp
- Cinnamon – 0.5 tsp
- Almonds – 50 g
- Plums – 300 g
- Water – 100 ml
Preparation
Sift the flour, mix it with salt, sugar, and cinnamon, add the egg, and gradually pour in the milk while whisking. Mix the batter until all lumps disappear. Let it sit for 20 minutes.
Heat some butter in a pan and fry thin pancakes. As you fry more pancakes, gradually add more butter to the pan.
Put pitted plums with the skin in a saucepan. Add sugar and water and cook over low heat until the plums break down and the sauce thickens. Season to taste with cinnamon.
Arrange the pancakes on a plate, pour the sauce over them. Toast chopped almonds in a dry pan. Once they start to turn golden, remove them from the heat and sprinkle them on top of the pancakes.
