- Sugar: 1.5 cups
- Margarine: 250 grams
- Milk: 1/2 cup
- Eggs: 4
- Cocoa powder: 3-4 tablespoons
- Baking powder: 1 tablespoon
- Oil: 2 tablespoons
- Rum flavoring: a few drops
Glaze:
- Cocoa powder: 2 tablespoons
- Sugar: 5 tablespoons
- Heavy cream (30%): 3 tablespoons
- Butter: 2 tablespoons
Preparation
- Prepare the Chocolate Mixture:
- In a saucepan, combine milk, margarine, sugar, and cocoa powder. Heat gently over low heat, stirring continuously until the mixture comes to a gentle boil. Remove from heat and allow it to cool.
- Prepare the Egg Whites:
- While the chocolate mixture cools, beat the egg whites until stiff peaks form.
- Combine Ingredients:
- Transfer the cooled chocolate mixture to a large bowl. While mixing, add the egg yolks one at a time.
- Add Dry Ingredients:
- Sift in the flour and baking powder. Add the oil and a few drops of rum flavoring. Mix well until combined.
- Fold in Egg Whites:
- Gently fold the beaten egg whites into the batter using a silicone spatula. This will keep the batter airy and fluffy.
- Bake the Cake:
- Pour the batter into a greased and breadcrumbs-dusted baking pan. Bake in a preheated oven at 170°C (338°F) for 45-50 minutes. Once done, slightly open the oven door and let the cake cool inside.
- Prepare the Glaze:
- In a small saucepan, combine all glaze ingredients. Heat over low heat, stirring constantly until the mixture comes to a gentle boil. Let it cool slightly.
- Glaze the Cake:
- Pour the warm (not hot) glaze over the cooled cake. Let it set before serving.
