A simple recipe for crispy yet juicy chicken breasts braised with apples and cabbage.
Ingredients
- White cabbage – 1 pc.
- Onion – 1 pc.
- Brown sugar – 4 tsp
- Black pepper – a pinch
- Chicken breast fillets – 4 pcs.
- Cumin – 2 tsp
- Carrot – 1 pc.
- Butter – 2 tbsp
- Wine vinegar – 2 tsp
- Olive oil – 2 tbsp
- Salt – a pinch
- Apple juice – 80 ml
- Red apple – 4 pcs.
Preparation
Heat 1 tbsp of olive oil on a skillet, add 1 tbsp of butter. Season the chicken breasts with salt and pepper, then cut them in half diagonally, and fry for 2-2.5 minutes on each side until golden brown. Transfer the chicken to a bowl.
On the same skillet, sauté diced apples without seeds (for 5-6 minutes), stirring frequently. Transfer the apples to a baking dish.
In a pot with a thick bottom, pour 1 tbsp of olive oil, add 1 tbsp of butter, chopped cabbage, carrot cut into sticks, and onion sliced into feathers. Sauté over medium-high heat, stirring frequently. After about 10 minutes (the vegetables should still be crisp), add the sautéed apples, chicken, 2 tbsp of cumin, 4 tsp of brown sugar, 80 ml of apple juice, and 2 tsp of wine vinegar. Mix everything, cover, and braise over low heat for 20 minutes, stirring occasionally. Season with salt and pepper.
