Chicken Breast with Eggplant

This dish is proof that just a few simple ingredients are enough to prepare an excellent Italian-style dish!

Ingredients

  • Eggplant: 0.5
  • Black pepper: 1 pinch
  • Dried oregano: 0.5 teaspoon
  • Salt: 1 pinch
  • Semi-skimmed cottage cheese: 80 g
  • Chicken breast fillets: 4

Preparation

  1. Soak toothpicks in cold water. Wash the chicken breast fillets, pat them dry, and rub them on both sides with salt, pepper, and oregano.
  2. Wash the eggplant and cut it into 8 thin slices. Cut the cheese slices in half, place them on the chicken fillets, then arrange 2 slices of eggplant on each fillet, and secure them with toothpicks.
  3. Grill for 5-7 minutes, first on the side with the cheese and eggplant, then flip and grill for another 7-10 minutes, until the meat is cooked through.
