Immerse yourself in the flavours of the Mediterranean with this Mediterranean Chicken recipe. It’s a symphony of succulent chicken, ripe tomatoes and aromatic herbs, all brought together with a splash of white wine. Olives add a salty depth that makes every bite a celebration of taste and tradition.
Ingredients:
- 2 tablespoons white wine
- 2 teaspoons olive oil
- 6 chicken breast halves, skinless and boneless
- 3 cloves of garlic, minced
- ½ cup onion, diced
- 3 cups tomatoes, chopped
- ½ cup white wine
- 2 teaspoons fresh thyme, chopped
- 1 tablespoon fresh basil, chopped
- ½ cup Kalamata olives
- ¼ cup chopped fresh parsley
- Salt and pepper to taste
Method of preparation:
In a large frying pan, heat the olive oil over medium heat.
Season the chicken breast halves with salt and pepper, then add to the pan and cook until golden brown on both sides.
Add the minced garlic and diced onion to the frying pan and fry until the onion is translucent.
Pour in the 2 tablespoons of white wine and simmer until reduced by half.
Add the chopped tomatoes, ½ cup white wine, chopped thyme and basil to the pan. Bring to the boil.
Cover and simmer over a low heat for about 20 minutes or until the chicken is cooked through.
Stir in the Kalamata olives and cook for a further 5 minutes.
Garnish with freshly chopped parsley before serving.
