Chachumbar - Indian Tomato and Cucumber Salad

Fresh vegetables diced and mixed with an aromatic dressing based on cumin and coriander.

Ingredients

  • Brown sugar – 1 teaspoon
  • Onion – 1 piece
  • Lemon – 1 piece
  • Black pepper – 1 pinch
  • Red tomato – 500 g
  • Cumin – 1 teaspoon
  • Cucumber – 1 piece
  • Green pepperoni pepper – 1 piece
  • Parsley – 5 g
  • Salt – 1 pinch
  • Fresh coriander – 1 teaspoon

Preparation

Toast the cumin and coriander in a pan without any fat until they start to release aroma. Remove, let cool, and then crush them in a mortar.

Slice the onion into thin strips. Peel the cucumber, slice it in half lengthwise, and remove the seeds. Dice the cucumber halves. Dice the tomatoes. Remove the seeds from the pepperoni pepper and slice it thinly. Mix with the onion, cucumber, and tomatoes.

Blanch the lemon and grate the zest from half of it. Mix the squeezed juice and zest with the crushed spices, salt, pepper, and sugar to taste. Mix with the salad and let it sit for 20-30 minutes to allow the flavors to meld.

Pluck and chop the parsley leaves. Adjust the seasoning of the salad if needed and sprinkle with parsley before serving.
