Calzone

Calzone is one of the classic Italian dishes that has gained international fame. This delicious alternative to classic pizza, filled with aromatic stuffing, can be easily prepared in the comfort of your own kitchen. Join us in uncovering the history of this exceptional dish!

Ingredients

Dough:

  • Italian type 00 flour – 500 g
  • Water – 300 ml
  • Salt – 16 g
  • Olive oil – 16 g
  • Dried yeast – 7 g

Filling:

  • Mozzarella – 100 g
  • Tomato passata – 150 g
  • Salami sausage – 80 g
  • Ricotta cheese – 50 g
  • Garlic cloves – 2
  • Olive oil – 10 ml
  • Salt – 2.5 g
  • Black pepper – 1 g
  • Dried oregano – 1 g

Preparation

Dough:

Step 1: Combine the Ingredients In a large bowl, mix salt, yeast (choose dry yeast), and flour. Then add water (it should be warm but not hot) and start kneading. The process should take about 5 minutes.

Step 2: Add Olive Oil When the dough starts to become more elastic and smooth, add olive oil. Knead for another 10 minutes, then set aside to rise in a warm place for 2.5 hours.

Filling:

Step 1: Add the Ingredients In a small bowl, add ricotta cheese. On a cutting board, finely chop the mozzarella into cubes and add it to the bowl. Also, add olive oil and salami. Mix well.

Step 2: Add the Passata Pour the passata into the bowl and season it. Peel the garlic and press it through a garlic press directly into the bowl. Mix everything and set aside.

Step 3: Roll Out the Dough Roll out the risen dough and divide it into 4 pieces. Roll out each piece into a thin, round disk about 20 cm in diameter (you can use a knife to help).

Step 4: Fill the Dough Place a portion of the filling in the center of each circle, leaving the edges free. Each disk should have about 95 g of filling.

Step 5: Shape the Calzone Fold the circle in half to create a crescent shape. Also, seal the edges to prevent the filling from leaking out.

Step 6: Bake the Calzone Place 2 calzones on a baking sheet or stone and put them in the oven. The calzone should bake for 15 minutes. Repeat with the second batch of calzones.

Step 7: Serve the Calzone Transfer the portions to plates and serve to your loved ones with a drizzle of olive oil or your favorite sauce. Enjoy!
