Made from simple ingredients like flour, butter, eggs and 7Up soda, this cake is moist, flavourful and perfect for any occasion. The lemon zest and extract add a delightful tang, while the 7Up soda gives it a light texture.
Ingredients:
- 3 cups Swan Cake flour
- 3 sticks unsalted butter (softened at room temperature, plus a little extra to grease the pan)
- 1 lemon (for the zest, optional)
- 5 large eggs (room temperature)
- 1 teaspoon lemon extract
- 3 cups sugar
- 1 teaspoon vanilla extract
- 3/4 cup 7Up (at room temperature)
Method of preparation:
Preheat the oven to 325°F (165°C).
Butter a large 12-cup Bundt pan well.
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This step is crucial, so beat on medium speed for at least 5-6 minutes.
Add the room temperature eggs, one at a time, while continuing to mix on low speed.
Optionally, add 1 tablespoon of lemon zest to the batter for extra flavour.
Stir in 1 teaspoon lemon extract and 1 teaspoon vanilla extract.
Gradually add 3 cups Swan Cake flour alternating with 3/4 cup 7Up. Mix well after each addition.
Continue mixing for at least 1 minute.
Pour the mixture into the greased Bundt tin.
Bake in the preheated oven for 1 hour and 10 minutes, or until a toothpick inserted in the centre comes out clean.
