Ingredients:
- 1 (15oz) tin of chickpeas, drained and rinsed
- 1 tomato, diced
- ¼ red onion, chopped
- 1 tinned heart of palm, chopped
- ⅓ cup grated low fat mozzarella cheese
- 4 sprigs fresh thyme
- 2 tbsp extra virgin olive oil
- 1 tablespoon fresh lemon juice
- salt and pepper to taste
Method of preparation:
In a large bowl, toss together the chickpeas, diced tomato, chopped onion and heart of palm.
Add the grated mozzarella and fresh thyme leaves.
Drizzle the extra virgin olive oil and fresh lemon juice over the salad.
Season to taste with salt and pepper.
Give the salad a final toss to ensure all the ingredients are evenly mixed and coated with the dressing.
