Baked Vegetable Fries

Healthy and tasty.

Ingredients

  • Potato, 1
  • Carrot, 1
  • Parsley root, 1
  • Sweet potato, 1
  • Beetroot, 1
  • Zucchini, 1
  • Extra virgin olive oil, 2 tablespoons
  • Spices: salt, pepper, dried oregano, 1 teaspoon
  • Spice mix (e.g., gyros, curry), 2 teaspoons

Sauce

  • Sour cream or Greek yogurt, 1 tablespoon
  • Mayonnaise, 1 tablespoon
  • Honey mustard (or regular mustard + honey), 2 teaspoons
  • Spice mix (e.g., gyros, curry), 1/2 teaspoon
  • Salt, pepper

Preparation:

Peel all vegetables except for the zucchini. Cut into sticks (zucchini as well). Place on a baking sheet lined with parchment paper.

Sprinkle with salt, pepper, oregano, and spices. Brush with olive oil. Place in the oven preheated to 185°C (preferably with fan) and bake for 30 minutes.

During baking, you can open the oven 1-2 times to release steam.

Then gently turn the vegetables (e.g., with a wooden spatula) and bake for another 15 minutes.

Mix the sauce ingredients. Drizzle the vegetables with the sauce and optionally sprinkle with chili flakes.
