Baked Salmon on Brown Rice

A delicious meal that you can quickly prepare at home. This healthy dish with tasty fish will impress everyone in the family.

Ingredients

  • Brown rice – 200 g (2 bags)
  • Frozen pumpkin, diced – 200 g
  • Frozen or canned peas – 0.5 cup
  • Salmon fillet – 600 g
  • Soy sauce – 2 tablespoons
  • Extra virgin olive oil – 4 tablespoons
  • Lemon slices – 6
  • Fresh basil or parsley – a few leaves
  • Spices: 2 teaspoons paprika, 1 teaspoon each of turmeric, oregano, cumin, 0.5 teaspoon chili powder, salt, pepper

Preparing

To prepare, cook the brown rice in salted water for about 35 minutes. Drain and spread it in a baking dish greased with 1 tablespoon of olive oil.

Rinse the frozen pumpkin and peas under warm water using a strainer, then drain and defrost. If using canned peas, just drain them.

Remove the skin from the salmon and cut it into 4 pieces. Rinse, pat dry, and place in a bowl. Season with salt and pepper, drizzle with soy sauce, add 1 tablespoon of olive oil, and mix. Coat the salmon with half of the spices or sprinkle the spices on top of the fish. Place the salmon on the rice.

Season the pumpkin and peas with salt and pepper, and mix with the remaining spices. Spread them on the rice around the salmon.

Add the lemon slices and green leaves. Drizzle with the remaining olive oil and bake in a preheated oven at 200°C (390°F) for about 15 minutes.
