Asparagus tart

A delicious and quick asparagus tart made with ready-made puff pastry.

Ingredients

  • Puff pastry, about 250 g
  • Green asparagus, 1/2 bunch
  • Cherry tomatoes, 150 g
  • Blue cheese (e.g., Roquefort), 100 g
  • Grated hard cheese (e.g., Grana Padano), 2 tablespoons
  • Eggs, 2
  • Fresh basil leaves (optional)

Preparation

Preheat the oven to 200 degrees Celsius.

Wash the asparagus, snap off the tough and fibrous ends (they will break at the right spot), and pat dry.

Cut the cherry tomatoes in half and dice the cheese. Grate the hard cheese (Grana Padano) finely.

Take the puff pastry out of the refrigerator, unfold it, and place it in a baking dish with sides (about 20 x 30 cm).

Arrange the asparagus and cherry tomatoes on the pastry. Season with salt and pepper.

Crack the eggs over the tart and sprinkle with the diced and grated cheese.

Bake in the oven for 20 minutes. Garnish with fresh basil leaves if desired.
