Clafoutis has a sophisticated French allure, yet it’s surprisingly easy to make. It’s an elegant dessert that doesn’t require professional pastry skills. Serve it warm for a cosy end to a meal, or enjoy it cold as a refreshing treat. It’s perfect for breakfast, brunch or dessert.

Pudding Ingredients:
- 4 large eggs
- ¾ cup brown sugar
- ⅓ cup all purpose flour
- ¼ teaspoon salt
- 1 ½ cups milk
- 1 tablespoon vanilla extract
Apple Ingredients:
- 5 tablespoons salted butter
- ⅓ cup brown sugar
- ¼ cup water
- 6 cups apples, peeled and cut into 1/2-inch wedges
- 1 teaspoon ground cinnamon (optional)
Method of preparation:
Preheat the oven to 350°F (175°C).
In a large bowl, whisk together the eggs and brown sugar until smooth. Add flour and salt, whisking to incorporate lumps. Gradually add the milk and vanilla extract and set aside.
Melt the butter in a 10″ ovenproof skillet over medium heat. Add brown sugar and water, stirring until sugar dissolves. Add apples and cook, stirring occasionally, until soft and caramelised, about 10-15 minutes. Sprinkle with cinnamon if using.
Pour the custard mixture over the cooked apples in the pan.
Place the tin in the oven and bake for 40-45 minutes, or until the custard has set and the top is golden brown.
Allow the clafoutis to cool slightly before slicing. Serve warm, dusting with icing sugar if desired.
