A simplified version of the famous Crêpes Suzette. Delicious crepes with orange sauce.
Ingredients
- 4 crepes
- 2 teaspoons sugar
- 1 tablespoon butter
- 1 orange
- optionally: 1 tablespoon orange liqueur
- to serve: whipped cream / yogurt / sweet cheese / orange segments / fruits
Preparation
Fry the crepes. Optionally, after frying, you can fill the crepes with cottage cheese and roll them into triangles. Heat a frying pan, sprinkle in sugar, add juice from half of the orange and after a while, add butter. Mix (e.g., with a silicone spatula) and wait until the syrup starts to lightly bubble. Immediately place the 4 crepes (folded into triangles) into the pan, reduce heat, and sauté for a moment.
Turn the crepes to the other side. Drizzle them with orange juice and optionally sprinkle lightly with brown sugar, fry for a while longer. For those interested, pour the orange liqueur (maximum 1 tablespoon) from the side of the pan and – tilting the pan slightly – carefully ignite (caution, the flame will be strong and high!) Transfer to plates and serve with your favorite toppings.
