It tastes amazing with pesto. You must try this.
Ingredients:
- 2 burgers
- 1 cup cooked, drained, and dried pasta (like for soup)
- 2 tablespoons olive oil + 1 tablespoon butter
Arugula pesto
- a handful of arugula
- 1 tablespoon pine nuts or cashews
- 2 tablespoons grated Parmesan cheese
- salt and pepper
- 3 – 4 tablespoons extra virgin olive oil
For garnish: baby Swiss chard leaves
To serve: extra virgin olive oil
Preparation:
Prepare the burgers as in the MAIN RECIPE. Prepare arugula pesto by blending all ingredients in a blender, adding olive oil to achieve the desired consistency (it can be more liquid than in the photo).
Heat a pan with olive oil and butter. Add the pasta and fry without stirring until nicely browned. Then flip and fry the pasta on the other side.
On plates, place the pasta, top with the burgers, and garnish with Swiss chard. Add arugula pesto, drizzle with extra olive oil if needed, and season with salt and pepper as desired.
