Lobster rolls are a quintessential summer treat, especially popular in New England, where they’re a staple of the seaside diet. This simple yet luxurious sandwich features succulent chunks of lobster meat lightly tossed with butter or mayonnaise and nestled in a soft, toasted bun.
Ingredients:
- 3 (8 oz.) lobster tails, steamed, meat removed and chopped (3 c.)
- 6 tablespoons butter, divided
- 4 hot dog buns, split
- 2 tablespoons freshly chopped chives
- Kosher salt
- Freshly ground black pepper
- Lemon wedges, to serve
Method of cooking:
After steaming and removing the meat from the lobster tails, cut the meat into bite-sized pieces.
Melt 2 tablespoons of butter and grease the split-top hot dog buns. Toast the buns in a frying pan over medium heat until golden brown on both sides.
Melt the remaining 4 tablespoons butter in a frying pan over medium heat. Add the chopped lobster and cook until just heated through. Season to taste with kosher salt and freshly ground black pepper.
Divide the warm lobster meat between the toasted rolls. Garnish with freshly chopped chives.
Serve the lobster rolls immediately with lemon wedges on the side.
