Ingredients:
- 2 courgettes
- 2 yellow squash
- 3 cloves of garlic (grated or chopped)
- 3 tablespoons lemon juice
- 1/2 teaspoon dijon mustard
- 2 tablespoons extra virgin olive oil
- 1/4 cup sliced almonds
- ground pepper
- sea salt
Method of preparation:
Using a vegetable peeler or mandoline, slice the zucchini and yellow squash into thin ribbons.
Place in a large salad bowl.
