Ingredients:
- 1lb ground turkey
- 1/2 cup yellow onion, diced
- 1/4 cup red bell pepper, diced
- 2 tablespoons fresh mint, chopped
- 2 tablespoons red curry paste
- 1 teaspoon ground cumin
- 1 1/2 tsp fresh ginger, minced
- 1/2 tsp ground coriander
- 1/2 teaspoon sea salt
- 1/4 tsp black pepper
Method of preparation:
Preheat the oven to 350°F (175°C).
In a large bowl, combine the ground turkey, diced onion, diced red pepper, minced mint, red curry paste, ground cumin, minced ginger, ground coriander, sea salt and black pepper.
Shape the mixture into small, bite-sized meatballs about 1 inch in diameter.
Place the meatballs on a lightly greased baking tray.
Bake for about 25 minutes or until cooked through and lightly browned on the outside.
