Ingredients
- Lime – 0.5 piece
- Beetroot – 3 pieces
- Garlic clove – 0.5 piece
- Spaghetti pasta – 500 g
- Olive oil – 1 tablespoon
- Walnuts – 120 g
- Black pepper – a pinch
- Salt – a pinch
- Grated Grana Padano cheese – 80 g
Preparation
In a medium saucepan, bring water to a boil. Once boiling, add the beetroots and cook for about 30 minutes until they become soft. Remove the beetroots from the water and let them cool.
Meanwhile, cook the pasta in salted water until al dente. Drain.
Peel the beetroots, cut them into smaller pieces, and transfer them to a blender. Add the garlic, walnuts, and the juice from half a lime. Blend until smooth. Add the grated cheese, season with salt and pepper to taste. If the mixture is too thick, add olive oil to achieve the desired consistency.
Toss the cooked pasta with the beetroot pesto until well coated.
