Sink your teeth into a delicious Mozzarella & Prosciutto Panini! Crispy ciabatta bread envelops layers of salty prosciutto, creamy mozzarella, roasted red pepper and fragrant basil. A drizzle of olive oil adds the finishing touch to this Italian-inspired sandwich.
Ingredients:
- 1 (12-ounce) loaf of French bread, cut in half horizontally
- ΒΌ cup reduced fat mayonnaise
- 2 tablespoons chopped fresh basil
- 1 cup (4 oz) grated fresh mozzarella cheese, divided
- 2 ounces very thinly sliced prosciutto
- 2 plum tomatoes, thinly sliced

Preparation:
Slice the top and bottom halves of the French bread, leaving a 1/2-inch thick crust; save the sliced bread for another use.
Spread 2 tablespoons of mayonnaise on the cut side of each loaf.
Sprinkle the basil and 1/2 cup cheese over the bottom half of the bread.
Spread evenly with prosciutto, tomato slices and the remaining 1/2 cup of cheese.
Cover with the top half of the loaf.
Cut the filled loaf crosswise into 4 equal pieces.
Heat a frying pan over a medium heat. Coat the pan with spray.
Place the sandwiches on the pan. Place a cast-iron or other heavy pan on top of the sandwiches and press down gently to flatten them.
Cook for 3 minutes on each side or until toasted (leave the cast-iron skillet on the sandwiches while they cook).
